Here you shall find a list of spices I use or mention in my recipes.

Sambal Oelek – It is a chili paste that is used in South East Asian cooking. It can be purchased at the oriental food section of your local grocery or Oriental markets. For more info: http://en.wikipedia.org/wiki/Sambal.

Panch Foron (Phoron) – it is a Bengali 5 spice. It contains mustard seeds, fenugreek seeds, nigella seeds, cumin seeds, fennel seeds and celery seeds in equal parts. Some panch phoran does not have mustard seeds. Although it is 5 spice, I prefer to use all 6 of these spices in mine.
