Baked Zucchini Fries

Everyone loves to eat potato fries. By potato fries, I mean super delicious food that is high in calories and made by cutting potatoes lengthwise and deep fried in oil. Since it is so high in calories it is really not something one should indulge in very often. But what a girl to do when she wants some fries but doesn’t really want those extra calories? Enter baked zucchini (also known as courgette) fries into the picture! Although they are not an exact substitute to the potato fries, they are none the less super yummy. They go be an welcome accompaniment for any meal. And those of you which picky eaters who just won’t touch their veges, this may be one way to get them to eat their veges somewhat willingly. Disclaimer: this is just my assumption, so try it out on your picky eater at your own risk! I am sure you must have deduced by now that I loved this particular dish and will be making it again and again.

Baked Zucchino Fries

Ingredients:
2 Zucchinies, cut lenthwise into thick strips of about 3 inch
3/4 cup Italian Breadcrumbs
1/2 teaspoon Paprika, hot or sweet depends on your taste (optional)
2 to 4 tablespoon grated Parmesan cheese, adjust for taste
Ground Pepper, to taste
1/2 cup milk
Cooking spray like pam

Pre-heat oven at 325F. Line a cookie sheet with aluminum foil. Lightly coat the foil with a little oil or cooking spray.

In a bowl mix the breadcrumb, paprika, cheese and pepper. Place milk in a separate bowl. Dip 2-4 zucchini strips in the milk and then coat it well with the breadcrumb mix and place on the baking tray. Repeat until all of the strips has been coated with the breadcrumbs. Spray with cooking spray like pam and place in the oven. Cook until the zucchinis are cooked and the coating is golden brown.

Take it out of the oven and serve hot with your choice of dip.

  1. I love baked vegetables and these look great! I always do baked sweet potato oven fries when i feel like having french fries, they seem to satisfy my craving somehow 🙂
