Chicken Salad Sandwich With a Make-Over

When making any meal I tend to look at my pantry and fridge to see what I can do jazz things up. Today’s lunch was no different. When I decided to make a simple Chicken Salad Sandwich with leftover grilled chicken, the colourful bottle of Ajvar was staring at me as I reached for the bottle of mayo. So I decided to take it out and make it a part of the lunch. Have a look at what I did.

Chicken Salad Sandwich

Chicken Salad Sandwich

Ingredients:
1 cup of diced grilled or cooked chicken
3-4 tbsp Mayonnaise
2-3 generous tsp Ajvar (Mild or Spicy to your taste)
Pinch of ground black pepper
Sliced onions (optional)
1 tbsp sliced and cut into small pieces Bell Pepper
4 slices of brown bread, lightly toasted

In a bowl combine everything but the bread and mix well. Divide the mixture into two and place each half onto one slice of bread. Cover complete each sandwich by covering them with remaining slices of bread. Your sandwich is now ready to be served!
