Wash salmon and dry with paper towel and place in a oven safe dish.
Squeeze a little lime juice on the salmon – just enough to lightly coat the fish. Sprinkle a little pepper and if wanted salt.
In a bowl combine mustard, honey, sambal olek, garlic, lime juice (1 tsp or so – depending on your preference) and coriander.
Add olive oil to the mixture – about 4 tbsp (it should be enough so that the mixture is not too liquid and not too thick).
Taste the mixture and adjust to taste – such as if too tarte from lime add a little more honey.
Coat the fish with the mixture.
Bake the fish in a medium heat over until fish is cooked. If the fish coating on the fish is browning, cover with aluminium foil.
