Recently, after having suffered from the flu for a week and not having had a decent meal that I could taste left me wanting something out of the ordinary. Since I hadn’t had fish in a while, when my husband asked what I wanted for dinner (as I was still not a 100%) I asked him to get some fresh salmon on his way back from the gym. As I mentioned I was less than 100%, I wanted something quick and easy. That lead to me thinking I haven’t made my baked garlic-butter salmon in quite sometime. But then I thought, why not change it up and make something different!
Herb-n-Garlic Butter Salmon
Ingredients:
2 Salmon Steaks
Garlic Butter (recipe follows)
1/2 onion, diced
1 garlic clove, finely diced
1/2 lime juice
Salt
Pepper
1-2 tsp Sugar, optional
1/4 cup cream or milk
1-2 tsp chili paste (something like sambal oelek), optional
Wash salmon and pat dry with paper towel to remove all water. Sprinkle with salt and pepper on both sides of the fish. Set aside.
In a frying pan, heat melt 2/3 of the butter. Add onion and garlic and saute for about a minute or two in medium heat. Add the fish to the frying pan, making sure that the onion-garlic mixture in not under the fish. Add lime juice over the fish while frying. Fry about 4-5 minutes on each side. Once the fish is cooked, remove fish from frying pan and set aside. Add sugar, chili paste and cream to the pan and cook the sauce down a little to desired thickness. Serve sauce along with fish, while still hot, with mashed potato or side of your choice.
For Herb-Garlic Butter:
Ingredients:
5 tbsp butter
1-2 tsp garlic powder, depending on how garlicky you want it
1/2 tsp dried basil
1/2 tsp dried oregano
1/8 tsp dried thyme
salt, to taste
1 tsp paprika
1/4 tsp pepper
Combine all of the ingredients and set aside for use.
