Sometimes I get bored with cooking the same thing. On one such evening of cooking chicken, I was in the mood to experiment. So I went looking through my fridge and pantry to see how I give my same old chicken curry a makeover. The result turned out to be tasty and a keeper 🙂 See the result for yourself!
Chicken Curry with Curry Leaves
Ingredients:
1kg Chicken, cut into small pieces
4-6 Curry Leaves
2 cups finely chopped Onions
2 tbsp Garlic paste
1 tbsp Ginger paste
1 tsp Turmeric powder
2 tsp Paprika or Chili powder
1/2 cup Plain Yogurt
1/2 cup Coconut Milk
1 tsp Cumin powder
1 tsp Coriander powder
1/2 tsp Panch Phoron (Bengali 5 spice) powder
3-4 Cardamom
2 inch piece Cinnamon
1 cup Water
1 Green Chili, optional
1 tsp Sugar, optional
Salt to taste
Oil for cooking
Wash chicken and set aside.
In a pot heat oil and add cardamom, cinnamon and fry until fragrant. Add the curry leaves and fry for about 30 seconds or until fragrant. Add onions and cook until they golden. Add ginger and garlic pastes. Saute until fragrant. Add the powder spices one at a time. Stir and cook for another minute. Then add coconut milk and yogurt. Add salt, sugar and green chili and cook until the spices are cooked and oil rises to the top. Add chicken and coat the chicken with the spice mixture. Add water and cover. Cook until chicken in done and the desired amount of gravy remains. Serve hot with rice, paratha or naan bread.
