Going back to the meal for my birthday, I had mentioned that I had made some dinner biscuits. They were a last minute addition to the menu and I had to scramble for the ingredients. Since I rarely make things from pre-mixed box, I didn’t have Bisquick Baking Mix at home which was one of the main ingredients. Thankfully I had decided on this the night before, albeit late night. Now acquiring the item involved a trip to the 24 hour grocery store as all other regular stores were closed at that time of the night. Armed with my new ingredient, I went to work in the kitchen to prepare for the dinner.
Now I should give some background on the recipe itself. I found the recipe on Food.com website and it called itself a copycat recipe for one of the seafood chain restaurants in North America called Red Lobster. The reviews of the recipe claimed how good the biscuits were but some did say that although they were excellent, they definitely were not the Red Lobster’s biscuits. I would agree with these reviewers that the recipe is a keeper but not the same as Red Lobster’s. As usual I made slight changes like using fresh herb instead of dried ones.
Now back to the biscuits in my kitchen. I made the dough at the very beginning and made them into round biscuits and placed them on a baking tray. Since I was not making baking them until all my other dishes for the meal were ready, I covered the tray completely with plastic cling wrap so that they would not get dry. I made the butter and set aside so that I could brush the butter mixture on the biscuits right before I put them in the oven. This worked marvelously as they bake in minutes and was ready just as you are plating your salad and soup. Without further ado, lets get to the recipe! I should mention, that my non-bread loving husband ate three of these with the soup 🙂
Cheesy Dinner Biscuits
Ingredients:
2 cups Bisquick baking mix
1/2 cup cold water
3/4 cup shredded sharp cheddar cheese
1/4 cup butter
2 teaspoon fresh parsley, finely chopped
1/2 teaspoon garlic powder
1/4 teaspoon dried basil
1/8 teaspoon dried thyme
1/8 teaspoon dried oregano
1/8 teaspoon sweet paprika (optional but it did give my biscuits that wonderful colour)
Pre-heat oven at 450 F.
In a bowl mix together Bisquick baking mix, cheddar cheese and water. Make sure it is a soft dough by kneading it a little with your hand. Either roll out the dough and cut the biscuits or equally divide the dough into 10-12 pieces and shape them with your hands. They may not be as pretty as cutting them. Place the biscuits on a lined baking tray. Leave at least 1/2 inch space between the biscuits.
Mix all remaining ingredients – butter, herbs, garlic and paprika – together in a small bowl and brush the butter mixture on the biscuits. Place the biscuits in the oven (middle rack preferably). Bake for about 8-10 minutes or until the biscuits are lightly golden. Serve hot with your dinner accompanied by butter 🙂
