Chicken Curry with Cabbage: Making of a Healthy Meal

My husband loves chicken, so we end up having chicken for dinner quite often. As a result, I am always on the look out for new ways to cook chicken. One night I had a large cabbage that I wanted to cook and I also had chicken on hand. Now the question was could I combine the two to make a one delicious yet healthy dish? Well the answer turned out to be YES! Here is what I came up with 😀

Chicken Curry with Cabbage

Ingredients:

2 pounds Chicken, cut into pieces
1.5 cup diced onions
3-5 pieces of whole cardamom
1 piece of cinnamon
2-3 bay leaves
1 tbsp ginger paste
1.5 tbsp garlic paste
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
3-4 cups chopped cabbage
Salt to taste
Water
Oil for cooking
Green chili, optional

Wash the chicken, drain water and set aside.

In a pot, heat a little oil and add cinnamon, cardamom and bay leaves. Cook until aromatic. Add onion and sauté in medium to low heat until golden brown. Add garlic and ginger and cook for another minute or two. Add turmeric, cumin, coriander and salt and cook for 30 seconds. Add a cup of water and cook the spice mixture until water evaporates and oil separates.

Add chicken to the spices and toss to coat the chicken with the spice mixture. Cook until the chicken starts to cook and may even brown a bit. Add cabbage and mix to coat it with the spices for about one minute. Add a cup of water. Cover and cook until both cabbage and chicken are done. Adjust salt as required. If you are using green chili, add 2-3 whole chili pepper and cover for a few minutes. Remove from heat and serve with rice.
